Our Mission
Japanese Knife Lab exists to bridge the gap between Japan's centuries-old knife-making traditions and an international audience hungry for authentic knowledge. We believe that understanding a knife goes far beyond specs and price tags — it requires hands-on experience, cultural context, and genuine expertise.
Our goal is simple: help you discover, understand, and choose the right Japanese knife through expert reviews, in-depth guides, interactive shop maps, and cultural storytelling — all rooted in first-hand experience across Japan's legendary blade-making regions.

Hands-On Testing

Takuya Ueda is the founder of Japanese Knife Lab and CEO of Kadai Kaiketsu Platform Inc. (株式会社課題解決プラットフォーム). Based in Tokyo, he has spent years visiting bladesmiths, exploring knife shops across Kappabashi, Sakai, Seki, Echizen, and Tsubame-Sanjo, and building relationships with artisans who carry on Japan's knife-making traditions.
His hands-on approach — personally testing knives, understanding steel types, and learning sharpening techniques from professionals — forms the foundation of every review and guide on this site. Takuya's mission is to make Japanese knife culture accessible to enthusiasts worldwide, combining deep local knowledge with clear, trustworthy content.
