Who actually makes these knives
The workshop is a family business, and the family is small enough to name. The first generation, Isamu, founded it after the war on a stated principle that has followed the workshop since: good material, good forging and heat treatment, good sharpening. Three things, in that order, and the argument is that a knife fails if any one of them is missing.
The second generation was Toshiyuki. The third is his three sons — Koichi, born in 1964, who represents the company; Hideo, born in 1965; and Hayato, born in 1969. Japanese coverage of the workshop is specific about the division of labour, and one detail is worth repeating because it explains a lot about the product: the final sharpening, the step that decides how the knife actually feels, is principally done by Hideo.
That is an unusual thing to be able to say about a knife in 2026. Most stainless kitchen knives at any price are sharpened by a machine to a specification. Here it is one person, and the knives are consistent because it is the same person.
The combine harvester that changed the workshop
The most interesting thing in Takamura’s history is not a founding date. It is a piece of farm machinery.
The workshop began by making blades for agricultural work — vegetable knives, mulberry cutters, and the heavy oshikiri blades used to chop straw and fodder. That was a real business with real customers, right up until it was not. Around 1953, mechanised combine harvesters started spreading through Japanese agriculture, and the work those blades did was absorbed into a machine. The second-generation Toshiyuki reached the conclusion the situation demanded: something had to replace the oshikiri.
What replaced it was stainless kitchen knives. A workshop that had been making tools for fields turned to making tools for kitchens, and did it early enough to still be at it seventy years later. The brothers then made the same kind of move again, being among the first in the region to work with powder high-speed and powder stainless steels when those materials were still unfamiliar.
It is worth knowing this before you buy, because it tells you what kind of workshop this is. Takamura’s reputation does not rest on continuity with a sword-making past. It rests on having twice changed materials ahead of everyone around them.
The steel, and what the names mean
This is where listings get confusing, so it is worth being precise about what is the workshop’s wording and what is the retailer’s.
Takamura’s own product naming describes forged powder stainless steel, alongside lines named for V10 Special and VG-5 Gold, and damascus-clad versions of several of them. In English-language retail, the powder stainless knives are very commonly sold under the labels R2 or SG2. Those are widely used trade designations for powder stainless steels, and sellers apply them to Takamura knives constantly — but they are not how the workshop labels its own catalogue, so we describe them as the retailer’s shorthand rather than the maker’s claim.
The practical question is what a powder steel does differently. Conventional steel is melted and cast, and the carbides that give it hardness end up unevenly distributed. Powder metallurgy atomises the molten steel and consolidates the powder, which produces a much finer and more even carbide structure. In a kitchen knife that shows up as an edge that can be taken very thin without crumbling, holds keenness for a long time, and resists rust. What it does not give you is toughness. A fine, hard edge is a fine, hard edge; it does not become forgiving because you paid more for it.

What "thin" actually means here
"Thin" is the word every Takamura listing uses and almost none of them explain. It does not mean the blade is flimsy. It refers to how much steel sits immediately behind the cutting edge.
When you push a knife through an onion, the edge only does the first fraction of the work. Everything after that is the blade wedging the two halves apart. A thick grind has to shove more material out of the way, and you feel that as resistance and as the cut going crooked near the board. A thin grind has less to shove, so the blade tracks straighter and the food separates instead of tearing. That is the whole trick, and it is why a thin knife can feel dramatically better than a sharper but thicker one.
The cost is structural. Steel that is not there cannot support the edge. Lever a thin blade sideways to pop a squash apart, or run it into a chicken thigh bone, and it will chip where a thicker blade would have rolled and recovered. Nothing about a good workshop changes that arithmetic.

Who should buy one — and who should not
Buy one if you already own a knife you are happy with, you cut mostly vegetables and boneless protein, you use a wooden or soft composite board, and you have felt the limits of a thicker blade and want to know what the other side feels like. A thin powder stainless gyuto or petty is a genuine upgrade in that situation, and the edge life means you will not be back on the stones every fortnight.
Do not buy one if this would be your only knife, or your first Japanese one. It is not that you would be disappointed — it is that the knife asks for habits you have not built yet, and the first chip is a bad way to learn them. Nor is it the right tool if you break down poultry, work around bone, or cut on glass or stone surfaces. There is no knife that is both maximally thin and maximally tough, and any brand that implies otherwise is selling you something.
