Where to Buy Japanese Knives in Tosa: Kochi's Free-Forged Blades (2026)
QUICK ANSWER
The simplest place to buy a Tosa knife is the Tosa Cutlery Distribution Center (土佐刃物流通センター) in Tosayamada, Kami City, Kochi Prefecture, which says it keeps more than 3,000 blades on display for sale, from kitchen knives to sickles, hatchets and axes. Check its hours and temporary closures before you travel, because the other Tosa sellers are mostly online-only shops, a maker that does not take visitors, or shops elsewhere in Kochi.

What Tosa knives are
Tosa uchihamono is the name under which Kochi Prefecture’s forged blades are recognised. The national designation dates from 6 May 1998[2], and it is one of two Kochi crafts on the national list, with Tosa washi paper[3][4]. The blades are made across the prefecture[2], but the distribution center calls Tosayamada the town of Tosa uchihamono[5].
- Free forging. The center describes free forging (jiyū tanzō) as heating the metal and working it with hammer or press between anvils, combining basic operations to suit each tool. With no fixed die, the shape comes from experience; the center says a smith needs at least four to five years before being trusted with finished products[5]. The national craft profile adds that Tosa smiths could make a blade from an order sheet giving only its full-size outline[2].
- Made for forests and fields. The prefecture ties the craft to its forests and farming and to blades valued for durability, ease of use and sharpness[7]. The center’s history records 399 smithies in Tosa in a 1590 land survey and dates the craft’s growth to the domain’s reforms of 1621, when forestry and new rice fields drove demand[6].
- The rules. Designated blades are hammered from iron or carbon steel, clay-coated before quenching (for sickles, kitchen knives and hatchets), finished by hand and fitted with wooden handles[2].
- Still training smiths. The prefecture’s Tosa cutlery cooperative (高知県土佐刃物連合協同組合), based in Tosayamada[8], runs a two-year course that takes trainees from the basics to free forging[9].
In practice that means carbon steel, which wants drying after every use; our carbon vs stainless guide explains the trade-off.

It says it stocks household and professional kitchen knives, sickles, pruning saws, hatchets, axes, forestry blades and outdoor knives, more than 3,000 items laid out so you can handle them[1].
Hours. The center’s own page gives 8:30–17:00 on weekdays and 10:00–16:00 on weekends and public holidays, closed over the New Year, and asks visitors from far away to get in touch first[1]. In 2026 it also closed for stocktaking (31 March–1 April) and its general meeting (23–24 May)[11].
Hokiyama Hamono (穂岐山刃物)
Hokiyama Hamono

Tosa Uchihamono-ya
An online-only shop in Tosayamada, open since 2004, selling Tosa blades from named local smiths: kitchen knives, hatchets and axes, outdoor knives, sickles and kogatana. Its own notice says there is no physical shop and no face-to-face selling.

West of Kochi City rather than in Kami, founded in 1973. Its online shop lists single-bevel yanagiba, deba and shellfish knives in right- and left-handed versions, double-bevel knives, whetstones and name engraving[14]. Our record has it closed on Sundays, but its hours are not confirmed.
Nishiuchi Knife Shop (西内庖丁店), Kochi City
Nishiuchi Knife Shop
A distinctive Kochi knife shop known for blades featuring ocean and citrus motifs that reflect Kochi's coastal culture. Unique aesthetic touches set these knives apart from typical Tosa forged blades.
Checked 2026-09-15 against the shop’s own sources; not confirmed: address, hours.
A shop concentrating on fish knives, with series named after Kochi’s sea creatures and citrus fruit, and an online shop[15]. We have not confirmed its street address, so contact it before visiting.
Our map also lists Tokuzo Knives (徳蔵刃物) and Morimoto Hamono Tosa (森本刃物 土佐) in Kami. Their details are not confirmed, and in our last check (15 September 2026) we could not find Morimoto’s shop, so contact either before planning a visit.
What you will find, and what it costs
- Kitchen knives in working shapes. ZAKURI, the online shop operated by the distribution center cooperative and selling the work of eight named smiths[13], lists polished and kurouchi (black-forged) knives, including funayuki, nakiri, deba, yanagiba and katsuo (bonito) knives, in Aogami No. 1, Aogami No. 2 and “super” steel[12].
- Farm, garden and forestry tools. The side of Tosa that shops elsewhere rarely show: sickles in many patterns, hoes, hatchets, pruning saws and axes[1][12]. Check your home country’s import rules before buying a large blade.
- Prices, as listed. On 1 October 2026 ZAKURI’s kitchen-knife category listed 109 knives from ¥4,730 to ¥45,760, tax included, small knives at the lower end and larger single-bevel knives such as yanagiba and katsuo knives at the top[12]. That is one online range; we have not checked in-store prices.
Custom orders and engraving
Free forging is why Tosa has always worked to order: the center says smiths can meet a user’s detailed requests and still receive orders from across Japan for blades made for one person[5]. None of the shop pages we checked offers a commission service for travellers, though, so ask at the center which smith to approach and allow for time and Japanese. Engraving is simpler: Tosa Tsuboya does it by hand, free[16]; Tosa Uchihamono-ya charges ¥500[17]; Sakoda Hamono lists it online[14]. Settle tax-free before asking for engraving.
Closing days and events
- Distribution center — New Year, plus closures posted on its news page[11].
- Tosa Tsuboya — irregular days[16].
- Sakoda Hamono — Sundays, per our record; not confirmed.
- Tosa Uchihamono-ya — phone line closed weekends and public holidays[17].
The center says it joins the knife festival held each autumn by the Kami City Society of Commerce and Industry, and holds a knife memorial (刃物供養祭) each December where unwanted blades are taken free, with demonstrations and sharpening[1]. We found no 2026 dates, so confirm before planning around either.
Tax-free and the November 2026 change
We have not confirmed which Tosa sellers are registered tax-free shops, so ask before you pay. Until 31 October 2026 the tax is removed at the till; from 1 November 2026 Japan switches to a refund method[21]:
- You pay the tax-inclusive price. Within 90 days, as you leave Japan, you show your passport at a tax-free terminal and customs confirms the export; the shop then refunds the tax[22][23].
- Purchases must total ¥5,000 or more before tax per shop per day[23].
- The customs step must be done before you check in your luggage, and you may be asked to show the goods[22]. Pack the knife in the bag you will check, but go to the terminal first.
Our guide to tax-free shopping in Japan in 2026 covers the procedure in full.
Getting there, and flying home
- To Tosa-Yamada: JR Dosan Line from Kochi, about 12 minutes by limited express or 30 by local train[20].
- To the distribution center: the center’s directions are for drivers, about 4 minutes from the Nankoku interchange and 15 from Kochi Ryoma Airport[1]. Without a car, plan the last leg from the station.
- To Ryugado (Tosa Tsuboya): a Tosaden Kotsu bus runs between Tosa-Yamada Station and Ryugado[20].
- Susaki and Kochi City: Sakoda and Nishiuchi are separate trips.
A knife flies in checked baggage only. See our guide to flying with Japanese knives for packing and paperwork.
Practical tips
- Check the news page the week you travel; the center posts closures there[11].
- Bring a translation app. The center’s website and most shop pages we checked are in Japanese.
- Left-handed? Single-bevel knives are usually ground for right-handers; Sakoda lists left-handed versions[14]. See our left-handed knives guide.
- More than one knife region? See our guides to buying in Sakai and Seki.
